Modena Balsamic Vinegar Acetaia Tour

See and taste real balsamic, a short trip from Bologna

Real balsamic vinegar of Modena has very little to do with the thin, sweetened dressing sold in supermarkets abroad, and the best way to understand the difference is to stand in an acetaia, the loft where it ages. This tour takes you to Acetaia Marchi, a family producer just outside Modena, where a live guide explains how cooked grape must is left to ferment and concentrate for years in a battery of wooden barrels of decreasing size, each made of a different wood, topped up and drawn off by hand once a year. You see the barrels, smell the air thick with vinegar and learn how the traditional balsamic, aged for at least twelve years, differs from the everyday product. The visit ends with a tasting, classic or prestige depending on the ticket, and the chance to buy a bottle to take home. Modena is a quick train ride from Bologna.

How it works: the meeting point is the acetaia itself on Strada Fossa Monda Nord on the edge of Modena, so you make your own way there and show the smartphone ticket at the entrance. The visit lasts about an hour and a half with a live guide in English, French, Italian or Spanish. Choose between the classic and prestige tastings when you book. Free cancellation applies until twenty-four hours before your visit.

Getting there from Bologna: frequent trains link Bologna Centrale and Modena in well under an hour. The acetaia is outside the historic centre, so take a taxi from Modena station or arrange a car; by road it is also an easy drive from Bologna. Combine it with a walk around Modena itself, whose cathedral, Ghirlandina tower and Piazza Grande form a UNESCO World Heritage Site.

Making the most of it: look for the DOP labels and the official bottle shapes when buying, and taste the oldest vinegars on a little Parmigiano Reggiano, as locals do. If you are travelling with a car, Modena also makes a natural base for the region’s motor museums.
